Amanda has a degree in International Hospitality Management and over 20 years working in the industry and has definitely worked her way from the bottom up...and all around… lots of travelling and lots of life experience.  She has been cooking professionally for over 10 years now and still loves the creativity and occasional drama that catering offers.  She has been largely involved with researching the (sometimes seemingly endless) paperwork and ‘setting up’ of the business. Also the more fun part of getting great suppliers, finding the fabulous food and creating new menus to tempt you all!


Aart, originally from Holland, is a qualified landscape gardener with a huge amount of other practical skills. He has worked with livestock and likes to pretend that zooming around in a quad or trundling about in a tractor is also work!

He is a hugely competent carpenter, joiner, general handyman and all rounder with lots of D.I.Y skills. Aart looks after the renovation of the Gille Brighde and makes our business a lovely, rustic little gem! His can-do attitude and apparently endless talents (!) led to him developing his passion for cooking and he too gained a City and Guilds Professional Cookery Award. he is a bit of a master baker and all our desserts, puddings, cakes and bakes are homemade...always. We serve his homemade bread with our starters and soups, and for breakfast too.

We are very passionate about Scotland and it's wild beautiful landscapes, it's amazing flora and fauna and of course the goodness of it's larder. Our lifestyle and business are always focused around ethical, local and sustainable principles - and we work closely with other people who share this vision.
