Believe it or not Scotland has a very even climate - geographically mild! Lots of rain to make the grass grow, and irrigate naturally, wide open space for wild venison and fat sheep and cows. Plentiful game and of course the seafood. And the light long summer days with occasional sunshine to warm things up, and grow cereals, flowers and even salad! Really... We source locally and believe in sustainabiltiy. Small independant producers that share the vision of small-scale and high quality are people we like to work with. We source as much as possible from our doorstep, and the majoruty from Scotland. Sadly we cannot find lemons or olives that will grow here (yet) but when further afield we still apply the basics... independant, small, cared for and we use Scottish wholesalers. It takes tie to build up these relationships but that's all part of the fun... soe of our suppliers have been with us for years - no matter where we go and some we will find along the way. We taste our food, we eat it! we choose our products because they are good, not fashionable or clever- just good. Then we apply a little creativity and imagination, and let you make the final decision. Amanda likes to play with fire! griddling, searing, chargrilling, roasting and even the odd flambe ...Fresh meats, fish and seafood are prepared with care and set upon sauces and sides that compliment and are reassuringly familiar but beautifully presented. Aart is our master baker with homemade breads, melt in the mouth shortbread and his infamous sticky toffee pudding. He is also a great fan of puddings and cakes so there’s always something soothingly sweet and slightly naughty on the menu. Almost everything is homemade, there are no packets or pre-mix sauces or artificial anything... we love food, we think it should make you happy and we want to share this passion with you…. |
